Combining the French term ‘brasserie’, for informal doing of high quality, and the year 1893, which marks the opening year of the first Waldorf Astoria in New York, Brasserie 1893 stands out as a perfect reflection of the trendsetting restaurant ran by the legendary Oscar Tschirky, maître d’hotel. Working for many years at Waldorf Astoria New York, this gourmet master is credited with the invention of Waldorf Salad and Eggs Benedict, both signature dishes of Brasserie 1893 in Beijing. 
The central focus of the restaurant is the show kitchen, which is installed with two exclusive Molteni stoves. Sip an exquisite glass of wine as you watch the chef grill your steak to perfection or prepare oysters.
