Dry ageing is a method of maturation that improves the flavor and texture of meats and seafood by letting their natural enzymes break down the protein molecules gradually. As with old cheese, the flavor, meatiness, and sharpness of fragrance all improve with dry ageing.

We only catch and hand-select mature whole fish. All items are grilled and basted to bring out their full flavor while still maintaining their natural texture and taste, and are sliced to weigh between 200 and 220 gr.
