Pastry Chef, Justin Lee

Korean-born pastry chef Justin Lee grew up influenced by his mother, a professional cook. He is known for his signature “twist desserts,” which blend classic Western techniques with Asian ingredients, earning him international recognition for his creative and unconventional approach.

After honing his skills at renowned establishments in Australia and New Zealand, Lee pursued a career in pastry and later returned to Seoul to open his own venue, JL Dessert Bar, named after himself. By incorporating elements of Italian cuisine and reimagining dishes such as carbonara as desserts, he pioneered an innovative style that established a new dessert experience known as the “dessert bar.”

Today, Lee continues to expand his activities across Asia while exploring new creations inspired by Japan’s four seasons and refined aesthetic sensibilities.
