At the sushi counter, Chef Kubota, trained at the world-renowned Sushi Saito and recipient of six consecutive Michelin stars as Head Chef in Kuala Lumpur and Hong Kong, brings Edo-style tradition to life, blending classic techniques with global influences.
The restaurant’s serene, artisan-designed interiors feature delicate butterflies and birds, a sculptural arrangement of black stones symbolizing the moon’s gentle energy, and a warm wooden sushi bar. The outdoor terrace, reminiscent of a zen garden, offers sweeping city views.

Each month, talented chefs from across the hotel’s culinary team take the spotlight, drawing on their rich experience in Kansai’s luxury hotels.
From master sushi chefs to pastry and French chefs, they showcase their individual artistry through seasonal ingredients, presenting creative and refined courses available only on these two evenings.
To elevate the experience further, our sommeliers curate a special pairing—either fine wines and spirits or an elegant tea pairing—to complement each dish.
