Dining & Drinks

Arbolea is a blended word, combining
Arbol (tree) and alba (dawn). Arbolea plays off the
colorful flowers and vibrant vegetation that surrounds
the resort. Open only for breakfast, the expansive
buffet features a blend of regional and global
dishes. Arbolea welcomes guests to their day, gently
reminding that have found a paradise of its own.

An author is a creator of something
original and personal. The resort’s most sophisticated
dining experience, Autor is a restaurant that will tell
the story of the chef in command. Guests will be
taken on a journey that at once introduces them to
new culinary experiences and offers a window into
the history of the journey’s lead author.

Cafetal means coffee plantation. The
concept is built around the traditional ‘Tianguis,’ an
economic and social gathering center in Mexican
culture since pre-Hispanic times. An upscale café and
market, this Tianguis in Tulum will serve coffee, snacks,
and essentials from morning to evening, where each
element is touched by Mexican roots with an elegant
twist.

Cenotes are common throughout the
Yucatan. The Mayans believed that Chaak, the rain
god, lived among them. They believed that cenotes
were entrances to other worlds. Guests entering this
space will feel as though they have found a similar
shelter.

Situated adjacent to the various pools that dot the resort. 
Each of the three "Chiringitos" or sand bars feature its own offering that changes regularly, but all of which are conceived to be refreshing and pool-appropriate. Serving refreshing drinks and snacks under the cover of a woven palapa. The Chiringuito, meaning small shop or open-air bar, is an institution that offers a convivial setting to connect and unwind.

The Jacaranda tree was transplanted to
Mexico by Japanese immigrants in the 20th century.
It is a fitting inspiration for this teppanyaki restaurant,
which will merge classic Japanese and Southeast
Asian techniques with local ingredients and styles.
Kengai is a new interpretation of a high-energy
teppanyaki experience, well-adapted for Tulum..

Maratea is a restaurant built around the
traditions that dot the countries of the Mediterranean
Basin. From southern Spain to North Africa, Greece
to Turkey, Maratea pays tribute to the sophisticated
and layered traditions of numerous distinct cuisines.
Maratea embodies classic forms, bringing together
threads of old and new.

In Japan, Ukai is a traditional fishing
method that has been used for centuries. In Tulum,
this contemporary sushi counter distinguishes itself
by fully committing to sustainable fishing and other
practices, a tribute to the seas.

Ultramar is a blended word, roughly
meaning ‘great sea,’ which is fitting for the main pool
bar that bleeds into water nearly on all sides. High
energy and free from burden, Ultramar is a central
gathering place, where guests can comfortably drink,
dine, and mingle from morning to late night. The
atmosphere and lifestyle aesthetic are both informed
by the rich artistic traditions of Mexican Surrealism.
