The name of our signature restaurant Codex is inspired by the ancient Aztec book of herbs Codice and dinner itself is an inspiring, immersive culinary journey. Enjoy flavor profiles of the area woven through each course and regional Mexican culinary traditions reflected in each plate, creating an aromatic and enchanting modern cuisine. The evening unfolds with smoked Pacific oysters, crispy soft-shell crab, and steamed lamb barbecue complemented by local herbs and produce from nearby San Jose del Valle along with a curated craft cocktail and wine list.
